Fish Tacos

Fish Ingredients:
2 pieces Tilapia
1 cup All Purpose Flour
2 cups Golden Bread Crumbs
1 bottle of Weihenstephaner Beer
2 Extra Large eggs (beaten)
*Canola Oil for frying

Tortilla Ingredients:
4 whole wheat tortillas
3 Bell Peppers (red, yellow, green)
1 cup Broccoli Slaw
1 handful of Cilantro
Sauce Ingredients:
1/2 cup Olive Oil Mayonnaise
1 bunch Cilantro
1 bunch Parsley
jalapeño peppers
1 Lime
Directions:
1) Wash and dry the Tilapia. Cut it into strips and then cubes.  Prepare three bowls; one of bread crumbs, one with beer and beaten eggs, and one of flour. Don't dirty your hands (it's important they stay clean when  your cooking something that has lots of steps.) Fork one cube at a time. First dipping it into the eggs, then the  flour, back in the eggs , and then evenly covering the fish in bread crumbs. In a deep frying pan prepare the oil for frying on a high flame. Fry the fish pieces until they are evenly crispy and brown. Lay the fish on a layer of paper towels, to soak the excess oil.
2) Spray the tortillas with PAM or brush evenly with olive oil. Fold them in half and bake them on 400° in the oven just till they lightly brown. Cut the bell peppers and give them a quick sauté to soften. chop fresh cilantro.
3) In a processor- process the jalapeño peppers, cilantro and parsley. Mix in the mayonnaise. spread the sauce evenly in the tortilla. Add broccoli slaw, peppers, and a few pieces of the fish. sprinkle with cilantro. Enjoy with Ice cold beer and few good squeezes of lime.
Bon Appétit!
