Salmon Basil Loaf

I loved making this Salmon loaf because it was so easy! At first I was worried- I never made any kind of loaf before. But I knew how to make chicken burgers, so I used the same idea. I threw in a few of my favorite ingredients, and added eggs and bread crumbs to hold the mixture together!
Ingredients
1 1/2 pounds Salmon (3 pieces)
2 cups Kalamata Olives
3 large Tomatoes 
1 large bunch Basil
2 cups Bread Crumbs
2 large Eggs
Directions
1) Cut the salmon into small pieces. Put the salmon into the processor until it is finely ground. Place the ground salmon in a large bowl. Process the kalamata olives until they are finely chopped as well. Pour the olives in the bowl with the salmon. 2) Dice three large tomatoes and add them to the olives and salmon. 3) Finely chop the basil and add this to the large bowl. 4) Pour in 2 cups of bread crumbs, and 2 large eggs. with a spatula or large wooden spoon, mix all the ingredients well. Do not use an electric mixer. 5) In a ceramic loaf dish, Pyrex, or foil pan (Spray the dish first), pour in the salmon mixture. Add basil leaves to the top, and bake uncovered on 350° for 45 minutes. Serves: 4

    Each picture is gorgeous but I can't get over how beautifully styled the second to last one is!!
