Lemon Cupcakes with Marmalade Frosting

My mother's recent visit to New York brought a lot of  delicious treats as usual; among them peanut butter chocolate chip cookies, cranberry almond biscotti, anise biscuits, and of course my all time favorite, orange and lemon marmalade. Although marmalade is delectable by the spoonful, these light, fluffy, and zesty cupcakes are just the right tool to scoop on some marmalade and frosting. I used to think I wasn't a frosting person, but then I realized I just hadn't been trying the right kinds- this one is melt-in-your-mouth-good, and if you aren't sure whether or not you are a frosting person I suggest making this recipe and finding out! 
Cupcake Ingredients
1 c sweet butter, softened
1 c superfine sugar
2 c self-rising flour
1 tsp. baking powder
4 eggs
1 tsp. vanilla extract
2 tbsp lemon zest
Frosting Ingredients
1/2 c sweet butter, softened
2 1/2 c confectioners' sugar
2 tbsp. orange marmalade 
1 tbsp. fresh lemon juice
1 tbsp water 
Directions
1) Preheat the oven to 350°. Put 18 baking cups in muffin tins. combine all the ingredients for the cupcakes in a large bowl and beat until smooth, about 3 minutes. Spoon the batter into the cups.
2) Bake the cupcakes for 20 minutes. Remove the pans from the oven and cool for 5 minutes. put the cupcakes on a cooling rack. 
3) In a medium bowl beat the butter, confectioners' sugar, lemon juice, water, and marmalade. 
4) Once the cupcakes have completely cooled top with icing.

  3. I hate everything about this post. I hate the pretty pictures. I hate how delicious these marmalade cupcakes look and sound. I hate the recent visit from your mother and I hate all the goodies she brought with her. And most all I hate that I can't hate it all in person.
