Leek & Mushroom Crepes

Once a crepe is topped with some chocolate sauce, melted caramel, or sautéed leeks and mushrooms, every bite tastes like another bit of heaven. A crepe is like a fork and knife- a tool to eat whatever you decide spread on-top, a vehicle for goodness. Crepes always make me nostalgic for my time spent in Israel, when my cousin and I would visit Jerusalem and stop at the tiny but always busy crepe stand. I'd watch my cousin work her magic while she'd order crepes for us, spread in chocolate, caramel, nuts, and toffee. They were the most incredibly thin, perfectly round, and delicious crepes I have ever had. Although I filled mine with a savory filling of leeks and mushrooms, they were just as lip-smacking good, and somewhat more wholesome than dessert crepes (not that I would ever turn down one of those!).
Ingredients
1 c all purpose flour
2 large eggs
1/2 c milk
1/2 c water
1/2 tsp salt
2 tbsp butter(or)margarine, melted
1 tbsp chili flakes (optional) 
*Serves 6 crepes
Filling Ingredients
4 leeks, cleaned, halved, medium chopped
4 oz cremini mushrooms, cleaned, thinly sliced
2 tbsp olive oil
1 tbsp kosher salt
1 tbsp coarse black pepper
3 oz Swiss cheese
1/2 c milk
Crepe Directions
1) In a large mixing bowl, whisk the flour and eggs. Add the milk and water gradually until fully combined. Add salt and butter and whisk until smooth. Stir in chili flakes (optional). 
2) Heat a lightly oiled frying pan over medium heat. scoop about a 1/4 cup of batter onto the pan for each crepe. With a spoon or spatula gently work the batter in a circular motion so the crepe becomes thin, even, and large.
3)Let each side of the crepe cook for 2 minutes until lightly browned.
4) When finished fill the crepes with filling and serve.
Filling Directions
1)In a medium sized pan toss in the mushrooms and leeks with olive oil, salt, and pepper. On medium-high heat sauté the mushrooms and leeks until they lightly brown.
2)reduce the heat to medium low and add the Swiss cheese and milk.
3) With a spatula, gently toss until combined.
