1lb dutch yellow potatoes
1/3 cup ginger root, minced
3 tbsp chives, small chopped
1/2 c white wine
1/3 c mayonnaise
1. Bring potatoes to a boil. When just soft (check with a fork), drain- do not rinse potatoes. Return potatoes to the stove top on a low flame. Mash potatoes, leaving some small chunks.
2. Stir in mayonnaise completely. Gradually stir in white wine.
3. Mix in fresh ginger, salt, and chives into mashed potatoes.
