Summer Beet Medley

Yesterday after I took pictures of the anchovies I couldn't stop craving them! Many people have the misconception that anchovies are untouchable and are only for foreign men. The real truth is that they have a salty, creamy flavor that's so satisfying, everyone can enjoy them. This dressing is a spin off Caesar salad dressing (yes, real Caesar salad dressing has anchovies) .
Ingredients
3 medium purple beets
3 medium golden beets
2 large beefsteak tomatoes, thinly sliced 
1 cup halved, golden (yellow) grape tomatoes 
1 cup halved, red grape tomatoes 
1/3 cup crumbled feta cheese
1 handful coarsely chopped parsley 
Dressing Ingredients 
1/4 cup extra virgin olive oil
2 tbsp plain Greek yogurt
2 oz container Italian anchovies in oil
3 garlic cloves, small chopped
1 lemon, squeezed 
1 pinch kosher salt
2 tsp coarse black pepper 
Directions
1. Boil beets over a high flame. Once beets are tender, and can be pierced with a knife, rinse, peel, and slice the beets. 2. In a food processor blend the olive oil, Greek yogurt, anchovies and (anchovy) oil, garlic, and lemon, salt, and black pepper. 3. On a medium sized serving platter arrange the beets, beefsteak tomatoes, and grape tomatoes. Sprinkle with parsley and feta. Before serving drizzle dressing over plate.
