After a week of little bites, this artfully served dinner was super filling and delicious. With out using many oriental ingredients, I loved how easy it was to adapt a basic lemon chicken recipe and incorporate stir fry elements by using the soba noodles and broccoli stems. Creamy and full of fresh garlic, this dish is the perfect meld of nutritious ingredients and exciting flavor.
Ingredients
4 large broccoli stems, halved
3.5 oz shiitake mushrooms
2 large lemons, juiced
2 handfuls garlic cloves
1 tbs cornstarch
2 tbs lemon rind
1 tbs granulated lemon peel
1 tbs granulated lemon peel
1 c water
2 c chicken stock
2 tsp kosher salt
4 chicken breasts, pounded and sliced into strips
9.5 oz Soba noodles
Directions
1. In a large sauce pan, sauté the broccoli stems until they begin to lightly brown. Set aside on a plate. Sauté the shiitake mushrooms until they begin to lightly brown as well. set aside.
2. In a medium sauce pan bring to a boil chicken stock, water, salt, lemon juice, garlic cloves, granulated lemon peel and fresh lemon rind. reduce to a medium temperature and stir in the cornstarch. continue stirring until the sauce thickens.
3. In the same large sauce pan pour in half of the sauce mixture, and chicken strips. cover the chicken strips with the rest of the sauce. Cover the pan and allow the chicken to cook for 15 minutes on a medium-low flame.
4. Follow directions on the back of the soba noodle package. On a plate top the soba noodles with broccoli stems, shiitake mushrooms, lemon chicken strips, sauce, and the garlic cloves. Add chili flakes for extra heat.
