A while back, my mom sent me a bad a** kitchen aid mixer. I was so psyched about it but I never really had much of chance to appreciate it until now; It's so easy to maneuver, and I've realized it's the best for cookie and cake batters. Over the past couple of years I've built up a small collection of cookbooks and didn't realize that I hadn't even opened some of them! Since I'm moving soon, I began packing up some of the cookbooks but a few caught my eye and didn't make it in as I sat down and quickly read them. I skipped the packing and moved on to the baking- These cupcakes from 500 cupcakes were so much fun to make and taste incredible! Their texture is soft and fluffy, and the icing is the perfect creamy balance.
Cupcake Ingredients
1 1/2 c self-rising flour
4 tbsp dutch cocoa powder
1 c superfine sugar
1 c sweet butter, softened
4 eggs
1 tsp baking powder
1 tsp baking powder
1 tsp mint extract
1/2 c semisweet chocolate chips
Frosting ingredients
1/3 c butter, softened
2 c confectioners' sugar
1 tsp mint extract
green food coloring
1/4 cup decorating pearls
Directions
1. Preheat the oven to 325°. Put 18 baking cups into muffin pans. In a large bowl, combine the flour, cocoa, and baking powder. Put aside.
2. In a large mixing bowl beat the sugar and butter until smooth. Add the eggs- one at a time combining well before adding the next. Add the flour mixture gradually to the batter mixing until combined. mix in the mint extract and chocolate chips (do not beat the chocolate chips in- they'll break a part).
3. Spoon the batter evenly into all 18 cupcake pans. Bake for 20-23 minutes.
4. Remove from the oven and allow the cupcakes to cool for 20 minutes.
5. In a mixing bowl beat the butter and confectioners' sugar until creamy. Mix in the mint extract and just a drop of green food coloring. Frost the cupcakes and decorate with baking pearls.
