Sweet Corn Salad

Simple, and fresh this salad is great in a good steak sandwich, as a side dish, or for a fast lunch. Try not to substitute any of the fresh ingredients for dry ones, the flavor is all in the freshness.
Ingredients 
3 ears of sweet corn
1 red onion, small diced
1 bunch fresh parsley, small chopped
1 bunch fresh dill, small chopped
1/4 c rice vinegar
1/4 c extra virgin olive oil
2 tbsp kosher salt
Directions
1) Boil the corn for 5 minutes. drain, rinse and shave the corn off the cob with a sharp knife getting all of the corn off and in large pieces. 
2) In a large bowl whisk together the rice vinegar, olive oil, and salt. 
3) pour in the corn, red onion, parsley, and dill. With a soft spatula gently toss.
Serves: 4
