Angel Hair Pasta With Homemade Spinach Onion Tomato Sauce

After winding perfect spools of pasta, spinach, and warm sauce around my fork there was the great bites. Eating this from a white ceramic bowl was the dream pasta dinner. Filled with just a serving, it was a real treat. Unlike bottled marinara sauce, this sauce is so flavorful you can decipher every  ingredient. Light and warm the taste of roasted tomatoes and salted spinach satisfied my craving for homemade pasta and sauce.
Ingredients
1 lb (1 box) Angel hair pasta 
1 onion, small chopped
1 large bag fresh baby spinach
3 cloves garlic, minced 
1  14.5 oz can Hunts Fire Roasted Tomatoes
1 18 oz can Tomato Paste
1 cup water
1/2 cup milk
1 cup grated pecorino romano
3 tbsp red chili flakes 
 1 tbsp kosher salt 
2 tbsp coarse black pepper
*Pecorino Romano for sprinkling
Directions
1. In a medium sized pot bring water to a rapid boil. Add kosher salt. Add pasta and stir. Return to a rapid boil. Cook uncovered, stirring occasionally. Drain well, rinse and toss lightly in olive oil. 
2. In a large saucepan add the 3 tbsp olive oil, onion, fresh baby spinach, and minced garlic. Turn flame to medium heat and cook covered. Once spinach has been cooked and onions are transparent, add fire roasted tomatoes, and tomato paste. folding in the onions,spinach, garlic, and oil with a spatula. Cover and let cook for 6-8 minutes. Add 1 cup water. Mix in with a spatula. Once the sauce is hot and lightly bubbling add in the milk, and cheese, gently mixing the sauce. once the cheese and milk are combine add the chili flakes, salt, and black pepper.
