Small Batch Latkes

  I love chanuka latkes however, standing over a fryer is not something I enjoy. Here's a small batch recipe that makes eight to ten large latkes. You can double and triple the recipe if you need to. These latkes are so crisp along the edges and oozing with potatoes right in the center. Top these with leben, pickled onions, and herbs- or enjoy simply with sour cream, and ketchup. 

Ingredients
4 medium Yukon gold potatoes
1 large onion
2 large eggs
1/4 cup all purpose flour
2 tsp kosher salt
1 tsp coarse black pepper
1 cup oil for frying

Directions
Finely grate the potatoes. set grated potatoes in ice cold water. finely grate the onion. Strain grated potatoes from liquid and squeeze out all excess liquid until practically dry. Stir onion, potatoes, eggs, flour, salt and pepper together. heat 1 cup canola oil in a large frying pan over high heat. test oil with a drop of water to see that it bubbles. scoop 1/4 cup of batter into thin, round latkes. fry for 2 minutes on each side, until latkes are crisp and brown.

Yields: 8-10 latkes
