Mango Guacamole

Walking into Whole Foods a cool wind of air conditioning hit me in the face. I couldn't have been more happy to be indoors, and out of the  humid 90° Manhattan streets. I had no grocery shopping plans in mind, however, I knew nothing would cheer me up more than wandering around the chilly aisles full of fresh produce, and fine foods. Although my loyalties belong to Trader Joe's, I couldn't resist the enormous produce section. Since it hadn't occurred to me to take a shopping cart I grabbed what I could carry: Some extra large avocados, one beautiful shiny red onion, a plump tomato, and the biggest mango I had ever seen! Coming home I decided to make something worth my purchase.

This was the first time I ever made a guacamole with a sweet kick. It was downright awesome! All it needed was the perfect chip as a tool for shoveling.
1) Pit and mash two avocados. Keep the pits of the avocados and add them to the guacamole so that it keeps its fresh color until your ready to serve. 
2) Dice one ripe mango, one tomato, and one half of a red onion. 
3) Add the diced vegetables to the mashed avocado. 
4) Add 1 tablespoon salt,  4 tablespoons of lemon juice, and 1 tablespoon of extra virgin olive oil.
