Chocolate Chip Pancakes

Growing up, chocolate chip pancakes were a Sunday morning staple- and always something to look forward to. My mother would whip them up in no time, and we would be busy dipping our piping hot, and chocolaty bite-fulls, into our frosty cups of milk. Whenever I think of pancakes I imagine it to be sunny outside with fresh fruit, cold milk, and maple syrup. Just like our Sunday morning's growing up. There were those few times I confronted the batter and griddle myself- it usually ended in complete havoc.
Ingredients
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
3/4 teaspoon baking soda
3/4 teaspoon salt,
1 1/4 cup milk
1/4 cup vegetable oil
2 large eggs, lightly beaten
1 cup chocolate chips
Directions
1)Whisk together all ingredients except the chocolate chips.
2)Heat a griddle over medium heat until hot and lightly brush the pan with oil (I used PAM). 3) Pour 1/4 cup of batter per pancake onto the griddle and sprinkle each pancake with a teaspoon of chocolate chips. 4) When bubbles appear on the pancakes, they are ready to be flipped. Cook until they are golden brown. Serves: 4
Bon Appétit!
