Homemade Pickles

This is the perfect rainy day activity! I took a basic pickle recipe and added turnips, parsnips, onions, and pickling spices.  The pickles will be ready to eat in six days. In a week from now I will definitely post how delicious they were! I am anticipating the final result, and hope they are as crunchy and flavorful as I imagine them.    
Ingredients
2 cup distilled white vinegar
2 tablespoons salt 
4 cups white sugar
8 cups sliced cucumbers 
2 cups sliced onions
3 cups of root vegetables (parsnips & turnips)
3 tablespoons pickling spice (coriander seeds, dill seeds, allspice seeds, mustard seeds, bay leaves, chili flakes)
Directions
1) In a saucepan bring vinegar, salt, sugar, and the pickling spices to a boil. Boil until the sugar dissolves. 2) Put the sliced cucumbers, parsnips, turnips, and onions in a large bowl. Pour the mixture (while hot) over the vegetables. 3) Fill two large mason jars and close tightly. Keep the jars in the fridge for 5 to 7 days and eat!
