Lemon Breaded Artichoke-Hearts

Even though artichokes are one of the most interesting, tasty, and beautiful vegetables- I understand why they are not on everyone's list of favorites! Let this recipe persuade any of your artichoke preconceptions, and open your 'artichoke-hearts' to let these beautiful vegetables on your favorites list ! These breaded, zingy bites are full of crunch, saltiness, and zest. Although they may taste fried-since they are so delicious- you can feel a little less guilty because these babies are baked! 
Ingredients
9oz Artichoke- hearts
2 eggs
1 lemon
1/3 c all purpose flour
1/2 c bread crumbs 
1 Tsp table-salt
1 Tsp dried parsley flakes
2 Tsp sesame seeds
1/4 cup shredded Parmesan + 2 Tsp (for sprinkling)
Directions
1. Preheat the oven to 350°. Line a cookie sheet and spray olive oil just to keep the artichokes from sticking. In three bowls prepare: 1) whisked egg and lemon juice. 2)Flour, and salt 3)breadcrumbs, grated parmesan, sesame seeds,parsley flakes.
2. dip each artichoke piece in the egg and lemon, then into the flour, back in the egg, and gently bread them in the crumbs and grated cheese. 3. Lay the artichoke-hearts on a pan and bake them for 15 minutes. 4. Set the oven to a high broil and allow the artichokes lightly brown and crisp. Serves: 3 
* This is also great dipped in a Lemon aioli!!

  4. I love artichokes and am excited to find an original recipe with this vegetable.

    The last time I saw artichoke anywhere else than home was in a Israeli restaurant where they mixed it with some sort of goulash, maybe an idea :)
