Chani Wuensch's Biscotti

Yesterday, for Jupe's winter seasonal sale, I made these delicious biscotti. Chani's recipe encompasses just the right measures of ingredients and steps to a crunchy, chewy, and satisfying sweet. I sprinkled these with cinnamon and sugar and let them get extra toasty in the oven for the perfect companion to a hot, sugarless coffee. This is one of the many unbelievable desserts Chani makes!

Ingredients 
2 1/2 c flour
1 tsp baking powder
1/2 tsp salt
1 1/2 c sugar
1 stick butter
2 eggs 
1/2 tsp vanilla extract
Optional: craisins, chocolate chips, 
cinnamon & sugar, orange peel
Directions
1. Preheat the oven to 350°. 
2.In a mixer or with an electric whisk, beat the eggs and sugar. Beat in the butter, and vanilla. slowly pour in the flour and continue mixing. Add the salt, and baking powder. 
3. Continue mixing until all ingredients are well combined. Stir in the optional ingredients of choice (seen above). 
4. On a cookie sheet form two logs. Bake for 25 minutes. Allow the logs to cool for 15 minutes. Slice the logs into biscotti's and put them back in the oven to bake for 6-10 minutes on each side.
