Endive & Horseradish Salad

After rummaging through my refrigerator for something fast  and delicious, I grabbed a package of endives and chopped them into a large bowl. I don't know what happened in the two minutes of throwing this salad together, but I started to just drizzle things in. unexpectedly it was insanely delicious, bitter and sweet, and so refreshing!  I quickly grabbed my camera to get some shots of it to share with You!
Ingredients
4 endive hearts, halved and chopped
3 tbs white horseradish sauce
2 tbs rice vinegar
1 tbs + 1 tsp agave nectar
1 tbs extra virgin olive oil
2 tsp kosher salt
1 tsp coarse black pepper
Directions
1. In a large bowl whisk together horseradish sauce, rice vinegar, agave nectar, olive oil,  kosher salt, and black pepper.
2. Dress the chopped endive hearts and toss.
* You can add toasted slivered almonds, or sunflower seeds
Bon Appétit!
