Linguine & Spinach

Two months ago, my sisters and I had prepared a bunch of gift baskets to give out to our friends and family; a colander stuffed with a jar of tomato sauce, olive oil, and garlic basil linguine pasta. Not surprisingly, like the rest of our group projects, the gift baskets didn't make it past our front door, remaining forever unfinished. As beautiful as they were, they were becoming a nuisance in the corner of our living room. I decided to grab hold of the situation and make something delicious with those bags of pasta- so we could get rid of the glaring reminder of our unfinished work. It ended up being a great present to myself and my sisters- I only feel sorry for the people they were meant for- Don't worry, we had you all in mind while we enjoyed this creamy, rich, and flavorful pasta dish. 
Ingredients
1- 8oz package linguine pasta
2 c spinach, chopped and steamed
2 tbs extra virgin olive oil
1/4 c freshly grated parmesan 
1/2 cup shredded mozzarella 
1/2 c heavy cream
1/2 tsp nutmeg
1 tbs kosher salt 
2 tsp coarse black pepper 


Directions 
1. Prepare the pasta as directed on the bag. add 1 tablespoon of the extra virgin olive oil to the pasta and gently toss. 
2. in a large sauce pan, on a medium high flame add the steamed spinach and olive oil. Once the spinach is hot sprinkle in the mozzarella, nutmeg, kosher salt and black pepper. When the mozzarella melts and is mixed in well- add the heavy cream. mix the cream sauce until the heavy cream is steamy. 
3. Plate the pasta pouring over cream sauce and spinach. Sprinkle over with parmesan.
