Quinoa Cheese Burgers

Growing up, my mom was not a traditional cook; she was constantly thinking up new and interesting dishes. Unlike most kids who brought PB&J sandwiches, Lays potato chips, and dunk-aroos for lunch, my mom would send us with her homemade scones (and some for the teachers), creative salads with her very own balsamic vinaigrette that was unlike any other because she'd also make her own raspberry vinegar that was the special ingredient. I practically tried everything and anything by the time I was ten. So eating quinoa patties wasn't a new thing for me but was still delicious and filled with familiar ingredients. A lot of it had to do with the way my mom would prepare everything, paying close attention to every detail of presentation. Even my lunch box was beautiful. Quinoa patties make the perfect child-friendly lunch and are super healthful and filling.
Ingredients 
2 1/2 cups cooked quinoa, room temperature
4 large eggs, beaten
1/2 teaspoon kosher salt 
1/2 cup fresh chopped chives 
1 yellow onion, finely chopped
1/3 cup grated cheddar cheese or Parmesan
3 cloves garlic, finely chopped
1 cup whole-grain bread crumbs
1 tablespoon extra-virgin olive oil
Directions
In a large bowl mix the quinoa, eggs, and salt. Add the chopped chives, chopped onion, grated cheese, and chopped garlic. Stir in the bread crumbs and let the mixture sit for 3 minutes. Form the quinoa into eleven 1-inch thick patties. 
* Add more breadcrumbs if the mixture is too wet. Add water if your mixture is too dry.
In a large pan heat oil over medium-low heat. add quinoa patties and cook until the bottoms have browned (about 7 minutes). Flip patties and let the second side brown. Lay patties on a wire rack to cool so they remain crisp.

  3. I made these last night and they were delicious!! I didnt have the chives- so I'm sure they would be even better (if thats possible) with them! thnx chan
