Rice Pudding (Arroz Con Leche)

Growing up my sister loved rice pudding. I was never tempted by it, however, every time I watched her pull one out of the fridge I instantly wanted one! That's how rice pudding is- you want in the second you see it. Perfectly creamy and dusted with cinnamon, this pretty treat is irresistible. 
Ingredients 
1 cup jasmine rice
3 cups water
2 cinnamon sticks
1/4 teaspoon kosher salt
1 1/2 cups sugar
3 large eggs, beaten
4 cups whole milk
1 cup raisins (optional)
1 1/2 teaspoons pure vanilla extract
Ground cinnamon for dusting

*Cooking note: Be careful to keep the rice and custard on a low temperature. Boiling the custard will cause it to curdle.
