Apple Cider Burgers with Ranch Dressing

 The smell of a good barbecue reminds me how close we are to greeting summer. All I could think about in my last hours of class today was how nice a thick and juicy burger would be. I couldn't wait to pack this with cider, barbecue sauce, and chili flakes. I'd been trying to think up a recipe to marinate meat in apple cider for a while and realized this was the perfect opportunity. The ranch dressing took a while to cook up in my head- it was inspired by some coconut milk yogurts I had just bought- which I'd personally thought tasted horrible plain. Once I added the cider vinegar it gave the yogurt a buttermilk flavor while the water and mayonnaise added the perfect consistency. I know I've said too much but let me just tell you, these are definitely worth making- or having someone make for you! 
Burgers
1-lb ground beef chuck
1/3 c apple cider
3 tbs barbecue sauce
1 tbs crushed red chili flakes
Ranch Dressing 
1 tbs mayonnaise 
3/4 (6oz) coconut-milk plain yogurt 
1 tbs apple cider vinegar 
1 tbs onion powder 
1 tsp paprika
1 tsp kosher salt
1 garlic clove, minced
1/4 c fresh parsley, finely chopped
Toppings
1 cup sliced cremini mushrooms
1 1/2 spanish onions, julienned 
3 tbs extra virgin olive oil
1 tbs kosher salt 
1/4 c apple cider
2 tsp apple cider vinegar
1 c heirloom tomatoes, sliced and grilled 
8 small dinner rolls/ ciabatta rolls
Ranch Dressing Directions
2. whisk the mayonnaise, yogurt, and apple cider vinegar. continue to whisk in the onion powder, paprika, garlic, and salt. gently stir in the parsley. refrigerate until ready to serve.
Burger Directions
1. In a bowl combine all of the burger ingredients. wrap the burger meat tightly in plastic wrap and refrigerate. roll and shape the burgers to a medium and thick size. grill on a high heat flame for 2 minutes on each side. 
On a large grill pan or grill 
Toppings Directions
3. In a large saucepan, on medium high heat, brown the onions and mushrooms in the olive oil and salt. Add the apple cider and vinegar. Reduce the heat to a medium flame and cover the saucepan. once the onions and mushrooms are soft, browned, and the apple cider has reduced remove from flame. 
4. Halve the tomatoes lengthwise. (Roast) Put them on a baking sheet seed side up, and cover with olive oil and kosher salt. Bake on 375° for 40 minutes.
( You can also quickly grill the tomatoes instead)
5. Assemble the burger with toppings dressing and close.
