Zucchini & Thyme Pizzas

These were finished in minutes and were so easy to make- it was practically a joke. Crispy, saucy, and lightly sprinkled with breadcrumbs, zucchini pizzas are fun to eat, and made us feel like little kids again- except healthier ones. So simple to assemble, you may even try this with eggplant slices, adding shredded cheese, or Parmesan.
Ingredients
1 zucchini, thinly sliced
1 c garlic marinara
1 c bread crumbs
5 sprigs of thyme
salt for sprinkling
olive oil spray
Directions
1. preheat the oven to 400°. line a baking sheet with zucchini slices and lightly spray with olive oil. 
2. with a tsp spread a dollop of marinara sauce on-top of each slice. Sprinkle on the bread crumbs. 
3. sprinkle thyme on top of zucchini slices. Bake for 23-25 minutes. 
4. Remove from oven and lightly sprinkle salt.
